Green Smoothie and Power Brownies

This is a great combination for a a healthy breakfast or a mid afternoon snack. The brownies are delicious with a cup of herbal tea or black coffee too. They make a nutritious snack for the family and friends. The brownies require no baking are easy to make.

 

Green Smoothie

Add all ingredients to the blender, blend on high until smooth and creamy, if the mixture is too thick add more plant milk or if the mixture is too thin add more avocado or frozen banana (I keep sliced banana chunks in the freezer).

Divide between two glasses and enjoy.

Ingredients for 2 servings:

  • 1 large frozen banana

  • ½ ripe avocado

  • 1 scoop plain protein powder or peanut butter

  • 1 handful of greens (spinach, kale or rainbow chard, frozen works well too)

  • 1 cup unsweetened almond or other plant milk

Power Brownies

  • 120g oats

  • 80g cacao powder

  • Pinch of salt

  • 160g runny tahini

  • 7 tbsp maple syrup

  • 2 tbsp coconut oil

  • Optional: chopped nuts

 

Grind the oats in a food processor, transfer to a bowl and add the cacao powder (and the nuts if you use them)  and a pinch of salt.

Pour in the tahini, maple syrup, coconut oil. Mix well together.

Line a square 6 x 6 inch cake tin with baking paper and press the dough into the tin.

Freeze for 30 – 60 minutes, cut into bite size squares and sprinkle with more nuts or coconut flakes or enjoy just on its own.

The brownies keep well in an airtight container for up to 5 days in the fridge.
